Another recipe - A Yummy Dip

I made this recipe today and
loved it!

I grabbed a couple stalks of celery
~ to dip ~
 so good!!

I love to make lil 
"sandwiches"
using 
romaine lettuce
leaves
(instead of bread)

roma tomatos
cucumbers
a few tiny slices of
Vermont Chedder.

THIS 
dip
will be a great addition!

Recipe - Chicken W/Creamy Walnut Sauce


1/2 cup of walnuts ( we used organic raw)

1 cup fresh chopped spinach

1 fresh garlic clove

1/4 tsp salt
( we used celtic sea salt )

1/4 tsp black pepper
pinch of cayenne 

1/3 cup of low sodium chicken or veggie broth

2 Tbs of finely chopped parsley

1/2 tsp lemon juice ( fresh squeezed if possible )

1 tsp extra virgin olive oil

2 chicken breasts
(or not)

pasta of your choice
(cook while blending walnut sauce)
OR
2 large crisp romaine lettuce leaves

 ----------------------------------------------------------------------------
 IN BLENDER / FOOD PROCESSOR  
 ~ combine ~

 walnuts
garlic
salt
pepper
cayenne
PULSE
until finely chopped.

ADD
broth
parsley
&
lemon juice.

BLEND 
until creamy.

Heat olive oil in pan over med-high heat.
add chicken & cook
stirring often until it's no longer pink
in the middle.
approx 3-6 minutes.

 ~ next ~
turn heat down to low
&
add walnut sauce.
stir approx 1-2 minutes.
add  
spinach
stir another 1-2 minutes on low heat.

Pour over whole wheat pasta of your choice.
( we used thin whole wheat  spaghetti )

we added a little more evoo to the pasta
while still in the pot
b4 topping
with walnut sauce.

OR 

Serve warm
or
cold
atop a large crisp
leaf of 
romaine lettuce.
fresh  
tomato  
would be lovely with this
or
anything else yr desires.

NOTE: 
If you feel the walnut sauce needs a little 
*tweeking*
go ahead and do so.

this was our version of the recipe.

we used spinach instead of broccoli.
and 
added a little more chicken broth
as well as
a little more
evoo on the pasta.

A New Recipe

was made tonight.
when jamie returned the
RAW
recipe book,
he picked up another.
A
cookbook
with healthy 
*cooked
recipes.

This dish had no photo.
i should have taken a photo
but we were running late
and
i was hungry.
plus, i had  
a headache that's been with me all day.
the headache is still nagging me
so
i'll post the recipe tomorrow.
it's a good recipe for those of you who like
 walnuts

garlic

 cayenne...

it's also a good cold 
or 
ever-so-slightly 
warm recipe  
layed on a bed of crispy  
romaine lettuce.



I went for my 
"follow-up" 
ultrasound yesterday.
my 
GYN 
has me do these 6 months after my 
yearly mammograms
 to be on the "safe-side".

for those of you who don't know,
one of my sisters
was diagnose with breast cancer at age 49
and passed at 54; so this is the reason i go twice a year.

It's painless
but
the way i lay on the table during the ultrasound
is a little hard on my shoulders & back
which ended up causing me pain the rest of the day.
jamie gave me an hour long massage last night
which helped a lot today
but
this nagging headache is caused by some left-over
neck pain.

anyway ~
i'm off to make a cuppa tea and relax b4 bed.

Saturday

This is going to be HARD

for me to watch
but
feel it's necessary.
I will probably cry thru half of the movie...

we've already made up our minds
( Jamie & i )
about the way we eat
and
will continue to eat from now on.
We have given up
red meat
pork
&
all "junk" foods.


Chicken & Shrimp
are the only 2 that we do eat.

I will be having a go at home-made almond milk soon.

we are steadily walking a healthier path day-by-day..

I feel it's necessary to watch the movie
(link below)
so i know b4 hand
if it's something i will recommend to others.
I hadn't even heard of this movie; they had a brief mention of it on
a morning show a week or so ago.

"I think skeptics will get the chance to see things from another view point 
and
perhaps walking a mile in those boots will give them some food for thought"

It's late but...

I thought i'd do a quick update b4 bed.

Besides the nice
pick-me-up 
the morning 
fruit & veggie
smoothies are giving 
~ us ~
i
am now noticing a difference in my
muscle and joint 
pain.
There's less of it.


I know it's only been, just over  a month
drinking one
(sometimes 2) a day
but
i am feeling a change.
not a HUGE change
but
a change, for the better.
:o)

I don't eat lunch very often.
When I do, it's something like an apple dipped in peanut butter
or
something along those lines.

Dinner has been challenging.
Some nights we are both exhausted
and make things like
buckwheat pancakes
(like tonight).
Which is ok.
It's better for me than cheeseburgers, chops, etc.
Red meat is no longer on our radar.
I was craving a tomato olive oil pizza the other night
so
we went to LaVilla for dinner.
When we were going out more often for dinner
i would say to Jamie
"you should skip the pepperoni & sausage, or at least one,
and replace it with spinach or something".
He would say something like " i don't have this often, so let me eat what i want".
Well..
the other night, he ordered a grilled chicken pizza on a whole wheat crust.
NO nagging from me!
ALL on his own, haha...

Ok ~ so we bought this recipe book called
~ RAW ~
I decided to make a mock
"meatloaf".
It sounded good 
(because it was full of sunflower seeds, walnuts & almonds)
portobello mushrooms, celery, red pepper, sweet onion, fresh spices etc.
It took 4 EVER to make.
Once it was finished (b4 putting in the dehydrator)
i had a bite. It tasted really good!
I was thrilled, and couldn't wait until Jamie got home to try this with a fresh side salad.
 Lets just say Jamie was a good 'sport'.
  he ate 1.
I choked down 1/2 of a half, & then started laughing @ how bad this was.
The dehydrator killed the flavor.
It would have been good
b4 dehydrating
on some organic crackers as a spread instead.
The book is going back to B&N.
Way to many ingredients in most of the recipes.
We were in a hurry when we purchased it, and figured we could just return it if
it wasn't what we wanted.

I will be making a batch of 
"raw"
crackers soon.
Will post when finished.

I made a sweet 'organic' distressed heart necklace as well.
Will be adding it to my shop tomorrow evening.

Getting back

on track, is what i am hoping to do 
starting tomorrow 
(Saturday).

It's been a couple of rough weeks
pain-wise.
Yesterday was a good day 
(mild back pain)
:)
Today was similar.

It's hard to believe i haven't sat at my bench since
mid December.
I hope to spend a little time there tomorrow.


Tomorrow will be
1 month 
since we started drinking 
'Green'
Smoothies
every morning.

Last weekend
Jamie was working around the house
and came up to make a 2nd cuppa coffee
and said
"OH wait,
I think i'll make another smoothie instead".
That says a lot, when he reaches for the 
fruits & veggies 
instead of the coffee he so loves!
:)

Last night i was surfing for more raw food info and came across a blog that mentioned a book I ordered, called

routine begins.
Part 2 
of getting me back to wellness.

One thing 
a time
seems to be the way 
i need to do things 
these days; but
that's OK.

Surprise_surprise...


This is what we woke up to this morning!


 

and it's still snowing.
they say it will linger thru
Wed!
It's beautiful
to watch
but
i hate driving in it!

I thought i heard on the weather channel this morning, that most of the USA was hit with some kind of cold weather.
Florida was one; i heard they had ice on the
orange trees
and will cause the cost of 
OJ
to go up by 1/3 
(i believe they said)
