Easy Breading Recipe for Chicken or Fish

i had 2 edit all the 

"yammer-in"

out.

(i yammer 2 much sometimes)

1 1/3 cup crispy rice cereal

(we used an organic "rice crispies" made with brown rice)

3 tsp extra-virgin olive oil

1 tsp paprika

a dash or 2 of kosher salt

&

fresh ground pepper

1-2 tsp onion powder

1 tsp dijon mustard

(we used "stonewall kitchen traditional pub style ")

2 large pieces of fish

( we used haddock )

or

skinless chicken 

tenders

(we used 6 average size tenders)

would have covered

approx 8.

 1-2 egg whites

(your call)

add more mustard if using more than 1 egg white

start by

preheating oven to 400-425 degrees F.

add 

mustard to the egg whites 

& 

whisk well 

(in a shallow bowl)

set aside.

~ take all dry ingredients 
& 
olive oil
put into a food processor ~

blend until the texture is fine.

pour dry mixture onto a plate

dip your meat in the egg whites

  

then roll around in the breading

getting both sides

&

lay on a  

foil-lined 
lightly greased
(spray-can canola oil is a good choice)
baking sheet or broiling pan.

for chicken tenders - 

bake until crisp for approx 30 mins

fish ran about 20 - 25 minutes

depends on the thickness

you be the judge.

you want a nice n crisp coating on both.

we normally buy flounder

but

they were out

so we had haddock.

adjust all ingredients accordingly

when using more meat.

(i'm so glad he found use 4 it!)

far from finished.

it'll get there.

 2 good size drawers are

good for storing hammers, solder & such.

don't mind the mess below.

the door will be going back on the cabinet

(to hide all of the baskets that hold a lot of my supplies)

my inversion table

is a pain in the butt

as it takes up space

but

it helps a lot

when my back & neck hurt.

a lot in 1 room!

it feels much better than it 

looks in these photos.

trust me.

and 

this little lady!

i found her at a gift shop years ago

and 

just had to 

take her home!

He felt the Earth move under his feet... Earthquake!

Ok, so not under his feet.

(jamie, that is).

he was laying on the sofa

when the sofa started to 

rock N roll.

ok, not really 

rock N roll

but

rumble! 

being on the 3rd floor
i'm glad i wasn't home yet.

i was driving

and

felt nothing.

z-i-p.

z-e-r-o.

0.

it's just as well.

mika 

was in  

s-p-a-z  mode

all morning.

she started at 7ish am.

she exhausted herself by the time it hit

which was something like 1:43 pm. 
heck ~ she exhausted me! 

jamie said

"she just laid on the floor looking around".

another 1 of my cats did this back in the early 80's 

when we had an earthquake.

she flew around the house like her tail was on fire
approx

20 min's b4 it hit.

it's pretty cool how animals can sense this.
not cool, that we had one.

oh, but i really came out to smell these

it's been stressful around here

we had a ceiling leak

in the shower.

new tenants moved in above us.

right after they moved in

a

softball size

spot appeared.

it dried out by the next morning

and

showed back up by the following morning

bigger

&

bigger

until it grew to the size of a basketball.

this started last sunday.

management

took their time about looking into it.

today they came in

cut a hole

to make sure there was no mold starting.

there is none

but

there is a large hole in my ceiling

while i shower!

a plumber needs to come in 

to make sure the pipes are all OK.

if that isn't enough...

our landlord

tells jamie today

(3rd week of the month)

that

she hasn't received the rent check

that was dropped in the mail june 1st!

she waits 3 weeks to tell us???

dayum...

N E way...

i spent the weekend painting

the armoire

with 2 coats of color

that i don't like.

it's  a little 2 blah.

so

now i'm going to take it back

to home depot

and see if they can add more color.

will post pics

(if it ever gets done, sheesh)

i'll start posting the little projects

as i get them done.

i've got to relax a bit b4 bed.
